Indonesian Fried Rice

Serves 5

  • 4 ounces peanut oil
  • 1 clove garlic, peeled minced
  • 1 ½ tablespoons ketchup
  • 1 ½ tablespoons soy sauce
  • To taste, kosher salt
  • 5 ounces chicken, pork, or beef, cooked and diced’
  • 16 ounces rice, cooked and cooled

Macédoine (small cube cut)

  • 6 ounces onion, peeled
  • 1 bell pepper, washed and seeded
  • 8 ounces shrimp, washed, peeled, deveined

1.  In a wok or wide sauté pan, over medium-high heat, add peanut oil.

2.  When oil is heated, add onion, garlic, and bell pepper.  Cook for several minutes.

3.  Add shrimp—stir-fry until shrimp has turned white.  Add ketchup, soy, and salt.  Add chicken, pork, or beef, and cook until heated through.  Adjust, re-season if necessary.
