Cilantro Aïoli

Yields 1 pint

  • 4 egg yolks
  • ½ teaspoon kosher salt
  • To taste white pepper
  • ½ teaspoon Dijon
  • 1 ½ tablespoons white vinegar
  • 1 ½ tablespoon chopped fresh cilantro
  • To taste fresh lime juice
  • 14 fluid ounces salad oil

1.  With the exception of the oil, combine all ingredients in a blender.  Mix until thoroughly combined.  While blender or processor is running, slowly pour oil into yolk mixture to form an emulsion.  Pour mixture from device; chill until service.
