Yields 1 pint
- 4 egg yolks
- ½ teaspoon kosher salt
- To taste white pepper
- ½ teaspoon Dijon
- 1 ½ tablespoons white vinegar
- 1 ½ tablespoon chopped fresh cilantro
- To taste fresh lime juice
- 14 fluid ounces salad oil
1. With the exception of the oil, combine all ingredients in a blender. Mix until thoroughly combined. While blender or processor is running, slowly pour oil into yolk mixture to form an emulsion. Pour mixture from device; chill until service.
