Serves 5
- 4 ounces peanut oil
- 1 clove garlic, peeled minced
- 1 ½ tablespoons ketchup
- 1 ½ tablespoons soy sauce
- To taste, kosher salt
- 5 ounces chicken, pork, or beef, cooked and diced’
- 16 ounces rice, cooked and cooled
Macédoine (small cube cut)
- 6 ounces onion, peeled
- 1 bell pepper, washed and seeded
- 8 ounces shrimp, washed, peeled, deveined
1. In a wok or wide sauté pan, over medium-high heat, add peanut oil.
2. When oil is heated, add onion, garlic, and bell pepper. Cook for several minutes.
3. Add shrimp—stir-fry until shrimp has turned white. Add ketchup, soy, and salt. Add chicken, pork, or beef, and cook until heated through. Adjust, re-season if necessary.
