Serves 8
- ½ cup white sesame seeds
- ¾ ounces soy sauce
- 1 tablespoon sugar
- 1 ounce dashi or water
- 1 pound fresh green beans
1. Toast sesame seeds in a dry sauté pan, moving frequently to prevent burning.
2. Using a spice grinder or and mortar and pestle, grind seeds to a paste. Mix in the soy and sugar. Thin with a bit of water or dashi. Reserve.
3. Wash green beans and trim off ends. Cut into 1-inch lengths. Blanch in salted, boiling water until al dente. Drain the green beans and shock in cold water. Drain again.
4. Mix green beans with sesame dressing.
